Veal Schnitzel Rolls, Corn Salsa, Cheddar, Chipotle Sauce

1 pack Three River Farms Veal Schnitzel
1/3 cup plain flour
Salt & pepper
2 eggs
1 ½ cups dried breadcrumbs
Olive oil for frying
4 slices cheddar cheese
4 lettuce leaves
4 crusty rolls

Chipotle Sauce
1 tbsp olive oil
1 onion, chopped
¼ garlic bulb
1L passata tomato sauce
¼ tbsp ground cumin
¼ tbsp smoked paprika
1/8 tbsp white pepper
2 tsp Tabasco Chipotle Sauce
75ml Worcestershire Sauce
1/3 cupdark brown sugar

Corn Salsa
1 corn cob
½ cup cherry tomatoes, halved
½ small red onion, diced
3 tbsp coriander, chopped
¼ tsp cumin
¼ tsp paprika
Pinch cayenne pepper
½ lime, juiced
Sea salt


Place flour and salt and pepper on a large plate. Lightly whisk eggs and 2 tablespoons cold water in a shallow bowl. Place breadcrumbs on a plate. Lightly coat veal in flour, shaking off excess. Dip in egg mixture then breadcrumbs, pressing crumbs on with fingertips to secure. Place schnitzels on a plate. Refrigerate for 30 minutes.

Pour oil into a large frying pan until base is covered. Heat over medium-high heat. Reduce heat to medium. Cook 2 schnitzels for 2 to 3 minutes each side for medium or until golden. Drain on paper towel. Keep warm. Repeat with remaining schnitzels.

Chipotle sauce
Heat olive oil in a frypan over medium heat and sauté the onion and garlic. Add the spices and cook for 1-2 minutes. Add the sauces and sugar and simmer for 10 minutes. Set aside to cool and then blend to form a smooth sauce.

Corn Salsa
Grill oiled corn on a chargrill pan, turning until corn blackens. Set aside to cool. Slice the corn kernels off the cob. In a bowl, mix the corn, tomatoes, onions, cilantro, cumin, paprika, cayenne pepper and lime juice and season to taste.

Slice rolls in half and place open on a baking sheet. Bake for 1-2 minutes until lightly golden. Top the bases with cheddar slices and grill until melted. Top with the schnitzel, chipotle sauce, lettuce, salsa and the roll lid. Serve immediately.
