Veal Super Bowl

Ingredients

2/3 cup light soy sauce

1/3 cup mirin

1 tbsp honey

1 tbsp lemon juice

1 tsp sesame oil

4 cups cooked rice, cooled

4 cups cooked quinoa, cooled

1 Lebanese cucumber, sliced

150g green beans, blanched

1 cup fresh or frozen peas, blanched

1 avocado, sliced

1 tbsp olive oil

1 pack Three River Farms Veal Schnitzel, cut

into strips

4 tbsp Greek style natural yoghurt

2 spring onions, thinly sliced

Black sesame seeds, to serve

Method

Combine soy sauce, mirin, honey, lemon

juice and sesame oil in a bowl. Pour half of

the dressing over the veal strips and marinate

for 10 minutes. Set aside remaining dressing.

Spoon rice and quinoa evenly into serving

bowls and top evenly with cucumber, beans,

peas and avocado. Drizzle with reserved

dressing.

Heat olive oil in a large non-stick pan and stirfry

veal until browned and cooked through.

Discard any excess marinade. Spoon veal

evenly over the bowls and top with yoghurt,

spring onions and black sesame seeds.
